New outlook!

I hadn't realized that I hadn't blogged in almost a week. Shame on me!! I guess I have really been focusing on my eating and getting back into "life" these days.
The new outlook on food has given me such a sense of relief. I am not sure if I have shared this but I have decided to incorporate more carbs into my life. The past year I have been follow Dick, my trainers, way of thinking and drastically restricting my carbs. These has work beautiful for the past year but wasn't easy either. I have been reading along with wonderful blog Abby writes daily and she has inspired me to have a different outlook. Thank you Abby!! I continue to write everything I eat and stay with in my guidelines but I have been adding variety. What can I say I enjoy food and I felt like I have the control in so many other aspects of my life why not this one. I have been trying a lot of wonderful recipes and even have begun doing a little tofu cooking, Sara is thrilled. If some of you don't know my 21 year old daughter is a vegetarian and once a week we have been trying to get together and try a new meatless meal. It has not only been a great bonding time for us but also great looking at "tofu" a whole different way. Thanks again Abby for all the wonderful tofu recipes you blog about so often. Can you tell that I am in love with Abby!! LOL!! I have been so blessed to have come across her blog. So today Sara is not working and we are going to attempt to have a tempeh sandwich today. It looked so good when Abby posted it I knew we had to give it a try. So that will be lunch today.
This morning I had fried up to egg whites and put it on a half of a Ezekiel muffin and melted a piece of 2 % cheese on it. Delicious and satisfying.
I also bought a book Abby has been talking about called the "The Flexatarian Diet" it is very interesting and I am considering attempting to go meatless a couple day a week. I have at admit I am being a little resistant only because of all the carbs. But I want to attempt to be open to new experiences and what a great place to start than with one of the things I love the most, food!!
It feels great to be back in the gym and the vertigo continues to get a little bit better as time goes by which is a blessing. I have a little bit of a cold going on so I will be curious to see how the vertigo feels when that is all cleared up.
Looks like it is going to be a beautiful day at least the next two days before the rain comes in on Saturday. I think I may take a nice stroll this morning before my "lunch date" with Sara. I don't have any where to run this morning which is good a have some time to get to some house work that I have been putting off for WAY to long.
I almost may attempting something new on the blog. I am hooked on blogs these days a lot of wonderful women posted pictures of what they have eaten so I am considering adding that to the blog. Now to get the camera.

I'm glad you are finding a good balance. Extremes are never good and they never work in the long-run. Hugs!

No MEAT?!Oh My goodness, I would go down kickin' & screaming if someone tried to take meat protein from me! :) I am on a parallel track w/ you Kathi about the carbs. I had limited myself so much last year & cut out pasta, sweet potatoes, brown rice & other good carbs because I got freaked out by them. It also set me up for a fall. Kim's got all that good stuff re-incorporated back into my diet & my body is loving it & I'm losing fat. Yea! What a great mix! Enjoy the journey! :)
